Range® Meat Clerk

Range® Meat Clerk online certificate program was developed to train and develop current employees and potential hires or job seekers.  With this in mind, Meat Clerk is made up of 16 courses designed to give you the tools and confidence to provide your customer with a great experience at the meat case. Furthermore, we cover poultry, lamb, pork, and beef. Our comprehensive program is divided into 3 manageable Range® Meat Clerk certificate sections.

Sections cover courses on providing exemplary customer service and understanding meat basic knowledge, including characteristics of over 240 meat cuts.  In addition, you will learn how to recommend proper cooking methods and substitutable cuts at the retail meat case or on the menu.  Range® Meat Clerk is a prerequisite to the Range® Meat Cutter certificate program.

Range® Meat Clerk Meat Essentials Certificate (RMC101)

Meat Essentials includes five courses. Specifically, we cover exemplary customer service and meat basics knowledge.  This includes characteristics of primals and subprimals, as well as recognition of the various types of cuts in the meat case.  In addition, you will learn how to use meat as an ingredient (slices, cubed, ground meats).

Range® Meat Clerk Cuts & Features Certificate (RMC201)

Cuts & Features includes 8 courses. To begin with, we provide the student with a strong knowledge base regarding the identification of over 240 cuts in the meat  case. This includes how to merchandise the individual cuts associated with beef, pork, lamb and chicken.  Furthermore, students will understand cut attributes, and how to recommend substitutable cuts and proper cooking methods to customers.

Range® Meat Clerk Cooking Methods and Preparation Tips Certificate (RMC301)

Cooking Methods & Preparation Tips includes 3 courses. In short, you will learn to assist your customer in choosing and preparing the right cut. Specifically, you will be able to recommend proper cooking methods and suggest interesting flavor profiles. In addition, Meat Clerks will know how to suggest the rubs, pastes and marinades to match the cut and cooking method.

  • Content

    The three certificate sections are Meat Essentials (5 lessons), Cuts & Features (8 lessons) and Cooking Methods & Preparation Tips (3 lessons).  You must complete each lesson and pass a quiz before continuing continuing to the next section. 


  • Length of Course

    Approximately 8 to 10 hours to complete.  For optimal performance use a high-speed internet.  Start on your desktop and finish on your tablet or phone. 

  • Course Expiration

    You will have 12 months from date of purchase to complete the Meat Clerk course.

Quiz Details

  • Types of Quizzes

    Includes multiple choice, true/false, matching and visual cut identification questions.  Contains sixteen10-question quizzes and eighteen visual cut identification quizzes.


  • Passing Grade

    Students must achieve at least an 80% score on each quiz to move on to the next lesson and receive the three individual Range® Meat Clerk certificates of achievement, signifying that they successfully earned a Range® Meat Clerk certificate.

  • Allowable Attempts

    You have 2 attempts to pass each quiz and move onto the next lesson. There are knowledge check questions throughout the lesson.  You may review the lesson as many times as you’d like BEFORE starting the quiz.
